Cheese, ham and tomato croissant sandwich.

Our Year 6 had a sleepover (yes, it seemed a good idea until 12.30 that night!) and I bought 60 croissants for breakfast. It seems that some were still so full from pizza and illicit midnight Haribo that only juice was consumed at breakfast. That meant there were 12 croissants that came back home with me. What to do with them? Breakfast, obvs. A bread and butter pudding, certainly. A quick sandwich for lunch, definitely.

Ingredients.

1 leftover croissant

2 slices of a nutty cheese, (leerdamer, maasdamer etc)

several slices of ham

tomato slices

several basil leaves, torn

How to…..

  • Slice the croissant lengthways.

  • Heat a dry frying pan to a medium heat.
  • Place in the cheese, ham, tomato and basil.
  • Pop on the top of the croissant.
  • Heat on each side for 2 minutes, until the cheese begins to melt and the croissant crisps up.
  • Serve with a small green salad, or a large glass of cold white wine.
