Rudolph shortbread biscuits.
Biscuits are one of my many weaknesses. To be honest, almost anything that is edible, and a few that aren’t (smelly candles, gin and cookie cutters) are weaknesses too. As Christmas is just around the corner, now is the time to start creating whimsical biscuits. These are good fun for a children’s party or a quick and simple treat for the school Christmas fair. The shortbread is made from three ingredients, a few red or brown chocolate beans, chocolate drops for eyes and salted pretzels for antlers.
Ingredients
150g plain flour
100g butter
50g sugar
How to …
- Preheat the oven to 160c
- Beat together the butter and sugar until well combined.
- Work in the flour, first with a wooden spoon and then with your hands.
- Knead together until the dough becomes uniform and pliable.
- Leave to rest on the side for 30 minutes.
- Roll out the dough to a thickness of a pound coin. Using an oval cutter stamp out oval shapes.
- Place on a baking tray on baking parchment.
- Add two pretzels for antlers, two choc chips for eyes and a chocolate bean as a nose.
- Bake for 10 to 15 minutes until golden brown.
- Cool on a baking tray.
