Yes, I know the World Cup is on, Yes I know I’m a football fan, butI also want to share this really rather unattractive but oh so delicious dish. Ideal for making whilst the BBQ is on and then spending an evening watching the football whilst consuming this dish. I have to warn you it is not a looker, but like many ugly ducklings when it matures into the final dish it is a thing of beauty.   • On a BBQ or using a griddle pan, grill your aubergine whole. .About 5 minutes per side, 20 minutes in total. The aubergine needs to be blistered and softened.

  • Remove the aubergine from the grill and allow to cool until you are able to handle it comfortably.
  • Cut away the top, peel off the skin and place the flesh into a deep bowl.
  • Add in the crushed garlic, a squeeze of lemon and a splash or two of olive oil.
  • Stir in the tahini.
  • Using a stick blender whizz the mixture to a puree. Taste and adjust the seasoning, lemon juice or tahini if needed.
  • Pour into a serving dish. open the tortilla chips, get a beer from the fridge and watch the football.
  • Result!!!

    I have recently been cooking with aubergines a lot and I have never tried this. I am going to give this a go, thanks

      A really lovely use of aubergines. The smokiness is the key.
