Peanut butter rice crispy treats

The younger teen is a peanut butter fiend. She loves anything filled, baked or just slathered in it. When I mentioned we needed something for this weeks packed lunches she immediately suggested making Rice Crispy treats but with added peanut butter. Always up for a twist on an old favourite I said why not? If you cannot eat peanut butter then leaving it out from this recipe makes little difference to the texture only the taste.

300g marshmallows
1 tsp butter
150 to 200g Rice Crispies
1 tbsp peanut butter
2 tubes of Smarties
Sprinkling of cake confetti, sugar shapes etc etc

How to
Line a 20 cm by 30 cm tin with cling film.
Melt the butter and marshmallows together in a pan over a very low heat.
Beat in the peanut butter to the melted marshmallows. (omit this stage if you need to).
Mix in the rice Crispies. You may not need all the rice Crispies as it very much depends on the viscosity of your marshmallow mix.
Mix in the smarties and confetti.
Press into the lined tin and leave to harden completely.
Cut into chunks and enjoy.
