Andy Murray mint slice

Yeah, yeah, I know, lousy title but there are so many really lovely strawberry and cream cakes out there in honour of the tennis at  Queens Club and Wimbledon that I had to do something different.

What was I going to make to eat whilst  watching tennis in the coming weeks and hopefully on Finals day itself if Andy gets through? We have a little joke in our house that says Andy remains British until he loses at which point he reverts back to being Scottish again. I thought I’d pay homage to these roots by using an oatmeal based biscuit as the first layer in a tray-bake. Chocolate always tops off these oatycakes nicely but what to put in the middle. Didn’t think that strawberries or cream would work here.  I do still have some freeze dried strawberries in the cupboard and for a minute I was about to pour them into the oatycake mixture.

Then I released my inner schoolgirl.

Of course, Andy Murray, murray mint – I had to use a mint fondant filling. Puerile I know but hopefully it made you smile too.

For the biscuit base i used my chocolate Oatycakes recipe. Make the biscuit but don’t then top the mixture with the orange and chocolate icing. Use this instead.

Mint fondant filling and chocolate topping

30g butter,

2 cups icing sugar

1 tsp mint extract

2 tbsp milk

1 200g bar of dark chocolate

Allow the oatycakes to cool in the baking  tray. In a large saucepan melt 30g of butter. Stir in 1 tsp of  mint extract and 2 tbsp of milk. Beat in 2 cups of icing sugar. You can colour this green if you want to but I don’t bother. Whilst still warm spread the fondant over the baked base and cool again.

Melt the chocolate in a pyres bowl either over a pan of hot water or in the microwave. Smear over the fondant and put somewhere chilly to cool.

Cut into small squares and serve with a cup of tea.

      Thank you so much for visiting, the mint and chocolate slice appears a little decadent but it’s ease to make really puts it firmly into the family favourite bracket in our house.
