Goober biscuits

Inspiration for a recipe can come from a variety of places. The problem is an inspired idea sometimes takes a while to translate through to a toothsome morsel. Going to the USA always equates in our family to returning home with a suitcase full of  food and cookery related items. Snuggled in amongst the 54oz bags of M&Ms, the new set of cup measures and countless bags of Nestle Tollhouse chocolate chips is often a jar of Goober.

Goober was rocking the salty  and sweet combo long before anyone salted a caramel in anger. Simply smeared on toast it is a cure for jet lag but as our holiday progressed I had a hankering to create a much more portable version of the peanut butter and jelly toasty.

Biscuits, make some PBJ biscuits, I thought.

I was too ambitious. I wanted to make peanut coated pinwheels filled with the grape jelly. First the peanut butter shortbread was too short. It crumbled and fell apart. Then the jelly oozed everywhere. I did finally make a few satisfactory cookies but really they cost me blood, sweat and tears.

I’m going to try again at the weekend but it will be a traybake this time. The crunchy peanut butter shortbread is fine when flat so that will be the base, a thick layer of bramble jelly and a crumbly salt flecked topping should work well too. I’ll blog that recipe tomorrow. If anyone has any better ideas please let me know.
